Bibingka

This traditional Filipino dessert is served during the Simbang Gabi or early Christmas mass. Made tastier with Peotraco Rice Flour.

Ingredients
  

  • 100 g Peotraco Rice Flour
  • 50 g All Purpose Flour
  • 2 ½ tsp Baking Powder
  • 75 g Sugar
  • 210 g Water
  • 2 pcs Eggs Large
  • Topping Optional
  • Salted Egg Sliced
  • Grated Cheese
  • Garnish
  • Grated Coconut and Butter/Margarine

Instructions
 

  • Preheat oven at 375-400F
  • Mix ingredients until smooth with no visible lumps
  • Pour onto prepared bibingka molds topped with salted egg and grated cheese
  • Bake for 15-20 minutes or until done
  • Brush with butter or margarine halfway baking time
  • Serve hot with grated coconut
